The back of the handle of the #7 looks like a Vollrath or Martin handle. Throw it in the electro and see what comes out. I'm guessing Martin slightly over Vollrath.
The #8 has a handle very similar to the early Martin skillet-griddle and especially Excelsior (Filley). The raised X and gate mark also seems consistent with Excelsior.
My final guesses:
7 - Martin
8 - Excelsior
Check the back of the red book. Don't know if Martin or Vollrath ever had gate marks. That's my .02 (pretty much what it's worth -- two cents). :D
