Happy to be here although I suspect it’ll hurt my wallet even more!
Name is Eric. I started out washing dishes at 15 in a fine dining restaurant, took a hiatus to jump out of airplanes in the Army, and have since been a CEC, restaurant and hotel executive chef, culinary instructor, and currently a health inspector.
Worked with some of the greatest chefs in the United States and have come across some coveted pans, but miss that side of swinging a knife professionally, so here I am!
What got me rekindled in vintage cast iron was actually the pursuit of a vintage Croatian camp grill me and a good chef pal had been pursuing for two years... I finally decided to contact the forge and the general manger of the forge enthusiastically agreed to re-make the camp grill.
Although I’ve never NOT cooked with cast iron I’ve found myself buying a couple pieces and re-setting the old iron bath. :-X
