I suspect the salt is doing most of the work.  It would stick into the potato and act like a fine, soft sandpaper grit.  I don't believe there is enough oxalic acid in a potato to matter.  Now if you were using rhubarb, I would buy that the acid is there.  It works well to take tarnish off aluminum.

You can use a couple of tablespoons cooking oil of choice and Kosher salt. Using tongs take a wad of paper towels and rub the oil salt mixture on a hot pan to clean then let it cool wipe out all the salt and oil. Light rinse with water reheat to dry light oil anD ready to go again.

Hello Mark. I'm not clear on your cleaning instructions. Especially the last sentence. Do you think you could please break it down further to where a dummy like me can understand it. Thanks.  :)

Okay, after cooking and usual cleaning of the cast iron you have the stuck on stuff.

1. You add 2 or  3 table spoons of cooking oil of choice and same amount of Kosher salt

2. Warm the pan and using tongs and a wad of paper towels rub the salt and oil mixture around the pan. The salt and oil with the rubbing action is a mild abrasive and cleans the pan.

3. Let the pan cool till it can be handled safely then wipe out the salt and oil mixture with clean paper towels.

4. Reince the pan with water to remove any residual salt mixture.

5 reheat the pan to completely dry it

6 wipe small amount of oil or PAM on pan bring to higher heat and 5hen let it cool

7 now ready to cook for the next time
