I would think that a much larger flat piece would withstand more because the area of detoriation is displaced over a larger area, as opposed to the smaller area with your tubing example where the area of detoriation is much more highly concentrated. Just some food for thought.
I say this based opon my own experience of using sheets of SS in a plastic barrel setup where I had two sheets, one on either side of the item to be cleaned. I first started out using smashed no. 10 food cans and putting two of them together, man, they went quick, after about two times they were plumb full of holes, looked like a sponge. Then I started using the sheets of SS and never did wear a hole in them. I might also add that one advantage of doing it using SS sheets in a plastic barrel is, if you do eat out a hole it ain't no big deal, you can just raise or lower the piece of SS to where the hole is not directly in front of the piece to be cleaned. If the hole is small it would pose no problem though.
